Opened by three-Michelin-starred twin chefs Jacques and Laurent Pourcel, this heritage villa in the city centre offers Mediterranean French gastronomy with wonderfully unexpected pairings like shrimp carpaccio with a dijon-vinaigrette sorbet. Look for subtle winks to local cuisine, such as the offal spring roll that accompanies stewed Miéral pigeon.
The weekday lunch specials are excellent value at 630,000d for three courses. Dinner is also served in the minimalist Glass Box next to the villa, while drinks and caviar are available until 2am at the Caviar Bar.
