One of the least salty oysters on the East Coast, the Rappahannock ('Rapp') is a smooth and sweet mollusc beloved in Virginia. This is a great place to try it, whether it be raw with a wedge of lemon on the side, enlivened with watermelon tequila granita and trout caviar, or served Rockefeller style (topped with butter, green herbs, and bread crumbs and broiled till golden).
