For breakfast without the eggy mainstays or a refreshing lunch, make a pilgrimage to this exquisite wood-lined eatery. By day it's Okonomi, serving only set menus: a small vegetable dish, baked egg, seven-grain rice and fish (choose from four preparations, like salt-roasted or kelp-cured), accompanied by green tea. By evening, it serves noodles as Yuji Ramen. Walk-ins only.

Most seafood is sourced from the East Coast, and nothing goes to waste (fish bones and head are simmered for ramen stock). No reservations are accepted for either Okonomi or Yuji – just show up and take your chance.

For more of a banquet, reserve well in advance for the three-hour, eight-course omakase tasting meal ($125 per person) on the first three Sundays of the month. Get on the restaurant's email list for advance notice of when bookings are opening up, as well as first looks at events like noodle-making classes.
