The phrase ‘everything but the squeal’ springs to mind at Cochon, regularly named one of New Orleans’ best restaurants. Donald Link pays homage to his Cajun culinary roots and the menu revels in most parts of the pig, including pork cheeks with sweet potato gratin and fried boudin (spicy sausage).
Other meats include rabbit and an oyster-and-bacon sandwich sent from on high. The food could be overly rich but ends up being hearty and smoky without inducing a food coma.
