Before your eyes, the cheerful staff stuff fluffy rice with dozens of fillings such as miso beef, spicy salmon and chicken curry – and veggie-friendly options such as miso mushroom and hijiki seaweed – then wrap it in a crunchy nori seaweed wrapper.
