Widely reckoned Kars' top restaurant, Kaz Evi specialises, as the name suggests, in goose (kaz): fried in chunks on rice (₺40), as sautéed foie gras (₺50), or a whole bird cooked in a clay oven (₺320, serves four). Optional side dishes include local Kars curiosities like haşıl (yoghurt and bulgur-wheat pilaf with melted butter) and hangel (a loose dough with caramelised onions and garlic yoghurt).
Meals come with complimentary side plates of sour pickled veggies and ezme (tomato-pepper salsa). The sturdy old-stone building is comfortably appointed with lace curtains, tear-shaped hanging lamps and many a goose image.
