This stunner of a boutique hotel in the hills to the south offers a number of choices. The main inn, set in a 19th-century renovated house, counts five rooms individually decorated with antiques and frescoes, and there's a library, an excellent restaurant and a real hamam. On the extended grounds above are cottages, stone houses and a 12m-high tower folly.

This is among the finest hotels in Aegean Turkey and owner Müjde Tönbekeci, author and publisher of Küçük Oteller Kitabı (Little Hotel Book) probably knows a thing or two about that subject. Müjde also gives Turkish cooking lessons (€50 per person, minimum two people), including vegan ones. Reach Nişanyan via a signposted dirt track off the Selçuk road as you descend into Şirince or via a fairly steep 250m climb from the village.
