Proprietor Mustafa has masterfully converted his family home into a haven for honeymooners and those requiring swags of swanky rock-cut style. Leading off terraces scattered with old farming utensils, salons once used for drying fruit and making wine are now swoon-worthy cave rooms, while a secret tunnel under the road leads to a hamam and garden annexe of stone-cut rooms.

For travelling families, Aydınlı's cave family suites are some of the most spacious in town and as they're all on the lower level, there are less stone staircases to navigate – a bonus for those touring with tots in tow.

The garden annexe is also home to Turkish Ravioli Restaurant (mains ₺27 to ₺55), which specialises in mantı, the restaurant's eponymous dish.
