Amsterdam architectural firm Space & Matter's ingenious project lets you stay in uniquely renovated canal-bridge houses, where bridge keepers once lived. Citywide, there are 28 two-person properties to date (most traditional, some modern). All have fridges, cutlery, crockery and water views; two have kitchenettes. You're emailed a password for a Bluetooth app to gain access. Guests must be over 21.
Breakfast (€35 for two) can be delivered each morning.
Standout properties include the largest, SWEETS Hotel Gerben Wagenaarbrug, in Amsterdam Noord, and SWEETS Hotel Overtoomsesluis, near the Vondelpark.
