Chef Will Holland draws on global influences when cooking monkfish tandoori-style, pairing local crab with mango salsa or serving risotto with tempura mushrooms. It all works beautifully, and the airy dining room with glimpses of the sea adds to the dining pleasure. The 7-course tasting menu (£80) is a fantastic exploration of Jersey produce.
