This modern milkfish joint sells the usual suspects – fish broth, panfried milkfish and braised pork rice, plus innovations like soy milk- or miso-based broth, and multigrain rice. Flavours are clean, fresh and delicate. One soup comes with pickled green watermelon (西瓜綿, xīguā mián), a traditional Tainanese pickle of underripe melons that lends acidity to the taste of seafood.
