Ask any St-Martin resident about Stachy's Hut and their eyes start rolling as they recall – mistily – nights spent partying at this rollicking joint on the road to Pinel Island. Larger-than-life Stachy and his crew dole out strong potions, including homemade bush rum infused with, ahem, local herbs and, so we hear, possibly an iguana tail. Don't say you weren’t warned!

Best night: Friday for live reggae.

Some of the island's best bands get revelers swaying, drinking and flirting until the wee hours in this charmingly ramshackle bar put together with salvaged wood and corrugated metal, and decorated with original art and flotsam and jetsam from around the world. Weekdays are quieter and a good time to try the blackboard specials, usually Creole-style grilled fish and meats, created in the tiny kitchen.
