Sant Jaume

This tiny bar, a former pharmacy, is a haunt for local characters, and features a marble counter and ornate embossed wooden ceiling. It's a sound stop for a coffee or beer any time of day; it also does a very decent agua de Valencia (cava and orange-juice cocktail). For elbow room, head to the outdoor tables, great for people watching.
