Opened in 1509 as a pilgrims' hostel, with a claim to be the world's oldest hotel, this palatial parador is one of Santiago's major monuments. Even standard rooms are grand, with wooden floors, original art and good-sized bathrooms with big glass showers. Some have four-poster beds.

If you're not staying, stop in for a look round and coffee at the cafe. Or dine at Restaurante dos Reis, one of Santiago's best restaurants.
