Chef Jon Ayala and his maître d' sister Arantxa transformed these former stables into an open-plan dining space with glass cabinets where beef is aged for 30 to 60 days, wraparound shelves stocked with wine, and floor-to-ceiling windows overlooking the surrounding farmland and mountains. Steaks and daily caught seafood are grilled over charcoal; vegetables come from within a 30km radius.
