Inside Bilbao's Azkuna Zentroa (Alhóndiga) cultural centre, Yandiola features modern Basque and Spanish fare that is as highly touted as the strikingly redeveloped building itself. Among the many hits are fried sea nettle with chive mayonnaise, roast suckling lamb, and line-caught hake with confit egg yolk. Arrive early – or stick around afterwards – for a drink on the roof terrace.
