The perfect mix of island casual (minus the sand) and refined service, this bar and grill offers diners colonial-chic surroundings and sweeping views of the Singapore Strait. The menu offers a mixture of cuisines found along the Pan-American Highway, from north America down to Argentina. The empanadas are a must, as is the salt-baked trout with tomatillo verde.

The bar is helmed by moustached Manhattan veteran Ricky Paiva, whose concoctions are definitely worth a sip.
