Sharing attached space with the excellent restaurant of the same name, INcomum's wine bar lacks medieval arches and other antiquated atmospheric touches, but it's one of Sintra's few spots where wine drives the show, not tourism.
Your preferences and price range will be sized up before tasting a few selections from the 180-deep wine list, all of which are available by the glass (€3.50 to €30) – they even poured us a 1967 Viúva Gomes Collares and not because they knew who we were! Staff are knowledgable, and there are tidbits (charcuterie, cheeses) for accompaniment. Escape the tourists and drink with fellow aficionados.
