A key ingredient of the stock dashi is flakes of katsuobushi (dried bonito), which the Nihombashi-based Ninben has been making and selling since 1699. The counter here serves cups of stock as well as tamago-yaki (rolled omelette seasoned with dashi; ¥150) and, between 11am and 2pm, rice dishes topped with katsuobushi.
It also has a branch in the international terminal at Haneda Airport. Sister restaurant Hanare, in Coredo Muromachi 2, offers more substantial meals.
