Housed in one of the capital's historic wine shops, chef Massimo Viglietti's Michelin-starred restaurant marries a classic, wood-panelled setting with audacious, experimental food and provocative deconstructions of Roman staples. The wine list is, unsurprisingly, excellent. Reservations recommended.
