A favorite top-end restaurant in Guadalajara, the 'Mayor' is chef Paco Ruano's local venture, having cut his teeth at El Celler de Can Roca in Girona and Noma in Copenhagen. His menu changes seasonally but feature creations like green aguachile soup with green apples, American wagyu in rich red mole, and rice pudding with cinnamon ice cream and toasted chocolate.
