Behind the swinging doors of a former saloon, 'The Spring' serves fabulously fresh ceviche in a dark and rather loud space with a cantina feel. It has a real buzz compounded by habanero salsa, the spiciest of chili sauces, and even though the staff can be somewhat surly, it's nearly always packed. Try the ginger margaritas (M$65).
