El Rey del Cabrito

This local institution is synonymous with Monterrey and serves up its most famous dish: cabrito (goat). It's a masterwork of kitsch with an extraordinary neon interior complete with deer and lions hung on the wall. The signature cabritos are slow-roasting over charcoal in the window, and dishes come still sizzling on a bed of onions, with salad and tortillas.
