Esquites Don Josué

Mexico City

A line often swings around the corner in Colonia Álamos for these popular esquites (corn kernels in broth), the most coveted of which is served with tuétano (bone marrow). Other varieties include kernels with mushrooms, huitlacoche (corn smut), longaniza (Mexican sausage) or chicken. The street stand has been slinging esquites for four decades and churns out up to 100kg a night.
