Foodies will recognize Enrique Olvera as the chef behind Mexico City's world-famous Pujol, but since 2015 he's also had Manta here in Cabo. Its elegant dining room (and open kitchen) contain a floor-to-ceiling window out to the Arco, and the experimental concept fusing Mexican with the flavors of the Pacific Rim is equally attention-grabbing.

Savory ramen is paired with espazote (Mexican tea) and black beans. Sea urchin arrives on a tostada with striped bass and salsa macha. The tasting menu is truly an adventure, and best enjoyed with top-notch mezcal, tequila and sake.
