Confectionary Toraya was founded in 16th century Kyoto; clients have included the Imperial Court. But its specialty, yokan, is pretty simple: adzuki (red bean) paste, fine-ground sugar and agar (which gives yokan its jelly-like texture). They also do beautiful, hyper-seasonal (changed every two weeks) wagashi (traditional Japanese sweets). Enjoy any of these with tea in the teahouse attached to the shop.
