A speciality of Akita Prefecture, inaniwa wheat noodles have been made by seven generations of the Sato family. As you'll be able to tell from the glossy, silky-textured results, they've pretty much got it down to perfection. Sample the noodles in a hot chicken broth or cold dipping sauces such as sesame and miso or green curry.
