Trattoria Trippa

Having honed his skills at Michelin-starred St Hubertus in the Dolomites, chef Diego Rossi and blogger Peter Caroli now have their own restaurant. As the name suggests, tripe features heavily on the menu alongside historic recipes using eel, wild greens, char, rabbit and even snails. The quality of the ingredients is superlative and there’s an interesting organic wine list to match.
