The crudo antipasto makes for a showstopping prologue, followed by beautifully balanced dishes like fettuccine cernia (pasta with grouper) and an earthy pasta con le sarde (spaghetti with sardines, raisins, pine nuts and fennel) in which every ingredient sings.
