Watching flocks of herons and flamingoes flutter overhead, swooning over glorious sunsets or finding out about local salt culture is what a stay at this remote, whitewashed hotel, amid glistening salt pans in the Saline di Trapani e Paceco nature reserve, is all about. Comfortable four-star rooms sport nautical blue-and-white colour schemes, and there are an outdoor pool and Jacuzzi April to October.

The hotel owners are born-and-bred salt-working stock (starting with great-grandfather Angelo Culcasi in the 1900s) and are happy to set up a salt-pan trek or WWF tour of the nature reserve for guests. Half-/full board costs an extra €25/45 per person per day.
