Chef and Slow Food aficionado Eliana Catalani buys ingredients directly from local producers. The restaurant’s trademark dish is maiale alla mazio, an ancient pork and red-wine stew said to have been a favourite of Caesar. Between courses diners can visit the wine cellar, which dates from 80 BC. Note the ancient columns on the side facade with old Hebrew inscriptions.

The top floor of the restaurant was once a 10th-century synagogue – look for the time-worn Hebrew characters on the pillars of the Vicolo dell’Atleta entrance.
