You could easily walk right past this restaurant; it doesn’t brag about its existence. Instead, its reputation is carried by word of mouth – which in small-town Pacentro travels fast. The pizzas are excellent, but the menu apogee is the arrosticini, an old Abruzzo classic comprising lamb skewers wrapped in foil and served in a sloping ceramic pot.

The dish pairs beautifully with a glass of red Montepulciano wine.
