A father-son team has taken over from a formerly starred Michelin chef at this wonderful contemporary bistro in the city centre, but the concept – and, more importantly, the food – hasn't skipped a beat. Inventive culinary treats made from Parma's classic local ingredients along with special, tri-flour pizza leavened for 70 hours (€9 to €16; available in taster portions!) are dazzling.
The risotto alone – impossible creamy, with Tropea onions, parmigiano reggiano and crusty speck – is worth an evening here. Order à la carte from the chalkboard menu of daily specials, or let the chef surprise you with his three-course tasting menu (€24).
