Purists can stick to classic nigiri and maki but Mr Hai is mostly about expanding your sushi horizons. Unconventional morsels, composed like little works of art, are delivered kaiten-style (via conveyor belt) or served à la carte. Some of the more out-there creations feature kimchi, pork or cream cheese; others are flambéed or deep-fried. Great sake cocktails, too.
