Wow – what a spot. Founded as a Benedictine abbey in the 12th century, this is now possibly the poshest B&B anywhere in the Pyrenees. The building’s decor puts most châteaux to shame, with vaulted archways, winding staircases, a Renaissance-style drawing room, ravishing gardens and a lovely pool – plus five regal rooms oozing antique grandeur. It’s around 13km southeast of Mirepoix.
