Top chef Yves Camdeborde stars again with this porcine-specialist tapas bar wedged in one corner of the Marché St-Germain covered market-shopping complex. A flying, fire-engine-red pig is the ceiling's centrepiece, surrounded by suspended menus listing dishes such as Bayonne ham croquettes, Bigorre pâté and shots of Béarnaise pig's blood; wines are chalked on the blackboard.
