Dubbed Paris' first chef-incubator restaurant for 'curious gastronomes', it invites a different trio of chefs each month to create its menu. Produce must be seasonal and responsibly sourced, and meals are ordered in advance online to ensure zero waste. Dining is in an attractive, minimalist space around shared wooden tables.
