On pedestrianised place de la République, this glass-box cafe-bar and sprawling terrace overlook the square's 9.4m-high bronze statue of Marianne, symbol of the French Republic. Parisian beers include Demory and Gallia; locally inspired cocktails range from the namesake République (chartreuse, gin, cucumber syrup and Perrier) to the vodka-laced Rive Droite (Right Bank; with lemon) and Rive Gauche (Left Bank; with lime).

The cafe's name – 'tossed but not sunk' in Latin – is the city's official motto, which became emblamatic of Paris' resilience and unbroken spirit following the 2015 terrorist attacks that took place near the square.
