Obsessed with sustainability, Mr Lyan partnered with the co-founder of the UK’s first zero-waste restaurant to transform his former bar into his first foodie venture. Cub's no-choice set menu pairs seasonal small plates with immaculate cocktails.

Although it's not a vegetarian restaurant as such, most of the dishes are plant-only. Book in advance.
