'The Anvil' is run by the wildly imaginative chef Simon Rogan (often dubbed Cumbria's answer to Heston Blumenthal), and is without doubt Cumbria's best-known restaurant. Known for his boundary-pushing cuisine and off-the-wall presentation, Rogan's dishes often have a focus on foraged ingredients such as sea buckthorn, juniper, dandelion seed and Douglas fir. Reservations should be made months in advance.
