Confronted by a strangely beautiful papier-mâché tree when you walk in the door, you instantly know this vegetarian bistro is not average. With locally sourced dishes like wild-mushroom ravioli, Moroccan cauliflower bites or 27-ingredient nachos with Canadian cheddar or vegan queso, Nourish has carved out a gourmet following in Banff. Dinner is served as shareable tapas and larger plates.

It seems amiss to not mention the three-column drinks list (beer, cider and creative cocktails) and the funky tables made from Bow River wood.
